Oops, I Skipped A Couple Of Days
Although, not on purpose, I haven't posted since Monday. Last week, blogger was been having server problems... taking forever to load pictures and such, and this week it wouldn't let me log on.
Monday I had the day off from work, except for attending a meeting at 7:30. I was a bum nearly the entire day and then at 5 I realized I had to get ready, get cash, go pick up my bridesmaid dress, get gas, go tan, go workout, and get to my meeting. The meeting was about all the new stuff we got at work and we go to try it all. The new Parisian Mushroom Soup is amazing. I actually got all that done and was 15 minutes early to the meeting.
Tuesday I was originally scheduled from 7:30 - 2 but I stayed till 4:45. They had a managers meeting and wanted an extra person on the clock so they could meet. Then I went and worked out and tanned (up to 6 minutes).
Wednesday I worked 7:30 - 2:30. Then the employment agency that I have been working with called and said that the guy I interviewed with was interested in hiring me, but he forgot to have me fill out one of their in-house applications and couldn't proceed without it, so I drove over there and filled it out. On the way back I got my nails done for the wedding and picked up something for dinner. I immediately passed out on the couch and didn't wake up until nearly 10pm.
Well, it's Thursday. I am supposed to head to "TheArmpitOfHell" today. I slept late and I am having a hard time getting moving. Does this sound like a broken record? I have a hard time getting moving anytime I have to go to "TheArmpitOfHell". It's probably some subconscious wave telling me to put off going until the last minute since I was so miserable in "TheArmpitOfHell" for so long.
I am going to get up and go find some 1-hour dry cleaner that can steam my dress for me and then I will head to "TheArmpitOfHell". I am going to have a busy, busy, busy weekend. My grandmother, Nana, will be celebrating her 86th birthday tomorrow. The rehersal dinner is also tomorrow evening at 6pm. Then Saturday I will have a hair appointment and the wedding at 6pm. Then Sunday, is my parent's 34th wedding anniversary. I hope to sneak a couple of pictures while I'm home to post on here for those special occasions.

Easter Weather
Apparently, back in the early 1900s, the fashion industry made a pact, an inside joke, a practical joke of sorts, with Mother Nature.
The joke went like this:
The fashion industry vowed to design lightweight pastel colored "Easter" sun dresses and market them to women and little girls all over the world.
Then Mother Nature, in turn, vowed to blow in a cold front out of the blue, changing the temperatures from mid-80s to low-40s and then add some long slow drizzling rain for good measure, that quickly disappears the next day when the temperatures rebound back into the 70s-80s.
I am not amused.
Luckily, I ended up working from 8:30am to 2:00pm and didn't get a chance to spend money on a new Easter dress this year.

Errands and Work
So much for a typical Spring Break. I got up early and went to my interview at 10am. I left early because I had no clue what the traffic was going to be like. I liked the guy I interviewed with and I really hope I get a call next week saying "come work with us."
I was supposed to have picked up my dress but the lady rescheduled for 7pm Sunday night. I then decided that after finishing my first quarter of school I was going to treat myself to a small taste of spring break. So about 5:00 I drove over to Mockingbird Station and started working out at Private Workout. When that was done, I went next door to Park Cities Tan, I decided that I didn't want to ruin Barbara's wedding pictures with the white reflective explosion-looking things that happen when you take pictures of shining white objects. I know, I wont be tan by Saturday.. but hopefully the glare will be gone.
Today I worked from 12 - 5, I really didn't want to go to work today, it was cold and raining and one of those days where it would have been perfect to just rent a movie and curl up on the couch. Once I got home I changed clothes and went to dinner with some dear friends from college, Mike and Sam. We ate at Stoneleigh P and had some really good burgers. After a quick trip to Borders for some coffee I headed home.
The goal for tonight, a couple of loads of laundry and heading to bed. I have to be at work at 8:30 in the morning. I am supposed to work until 2pm but I have a feeling I might get sent home early. One of the managers said that we normally aren't busy on Easter Sunday, another reason why when I open my own restaurant... I will not make my employees work on a holiday when we aren't going to be busy enough to even be open in the first place. I vow here and and now to close on Easter, Christmas, Thanksgiving and New Years. Most places I have worked at or seen usually close on Christmas and Thanksgiving but I am going to add the other two holidays.

FINAL EXAMS ARE OVER!
I am home and exams are over.
The ServSafe exam, the actual grades should be posted on the website in 10 days or so.
The Concepts test and my Knife Cuts Practical... he didn't tell us what we made, so I'm still waiting.
The Management test today wasn't anywhere near as bad as I had anticipated. Our mid-term was a horrible test that basically covered every topic in the book that she DIDNT tell us to study. The last question on our exam was "What did you think about this test?" and I blatantly stated that "at least this one covered the material on the possible exam topics list you gave us last week.
My Practical Exam tonight... and yes, darn it I forgot the camera again! The class was divided into two groups, chefs and gophers. We all couldn't take the exam at the same time because there isn't enough stove space. Tonight, Chef M. picked the groups by going in REVERSE alphabetical order. That meant I was in the "chefs" group first. The gopher group spent the first 3 hours of class running
around getting stuff we needed and cleaning up after us. We had to make two plates, presenting one entree, 2 veggies & a starch, and then we had to make one bowl of soup.
Chef created Four menus and we had to draw numbers out of a hat. Then he gave us a hotel pan with all of our ingredients and said "get cooking." My menu consisted of Chicken Saute with Onion Tomato and Basil, Maple Glazed Carrots, Brussel Sprouts with Pecan Butter, and Lyonnaise Potatoes and Puree of Split Pea Soup. Once we were finished, we plated up our creations and presented them to the Chef. He graded our menus right there so we had immediate feedback
and grades!

And, where did the other 6 points go?, as my mother would ask... I missed two points on three different points...
- He said my Puree of Split Pea Soup was a little thick, could have been thinned out a little more with chicken stock.
- One of the big things about plating is that if the food is hot, your plates are supposed to be hot also... and I didn't realize it, but the plates I put in the salamander to heat up must have had water droplets on them because they kinda scorched and made water rings on the plate .. so my presentation wasn't as clean as it could have been.
- And my Lyonnaise potatoes... (Fried Potatoes and Onions for the country folk).. we didn't have any clarified butter and I didn't want to use oil, I wanted the butter flavor... BUT .. when cooked at high temperatures, un-clarified butter, tends to burn and my onions were a little over caramelized. They weren't bad, just a little extra brown.
I was pretty proud of my 94. I have always known that I wanted to be a chef, and coming to culinary school and finishing final exams with the possibility of pulling out a 4.0 just proves my point that I am finally right where I should be.
I am exhausted and I'm headed to bed. I will post an entire list of recipes tomorrow, I may even see if I can figure out how to start a recipe database for my readers to pull from. That sounds like a cool COMPUTER GEEKy project to work on for spring break.

ServSafe Certification

So, Last Night, my first final exam for my Sanitation class was actually a ServSafe certification exam. The test was pretty easy. There were 90 questions, but they only count 80. There are 10 mystery questions in there, probably test questions they are sampling for a future exam, but the professor isn't told which questions are the mystery questions.
The fun part about this is that my professor told me that I missed 8 questions, and since that is less than 10... it is possible that I made between a 100 (if i only missed mystery questions) down to a 91 (if i missed all "real" questions), or somewhere in between.... but ANYWAY YOU SLICE IT... it's still an A.

Flat Tires and Errands
Well... this morning I was 45 minutes late to work. I walked out of my apartment and my back left tire was flat. And according to Murphy's Law.. I had on khaki pants and a WHITE shirt. So there goes 15 minutes for changing the tire, 15 more minutes to change clothes into another pair of khaki pants and a WHITE shirt (ones without tire grease on them.) and then the extra 15 minutes I got to spend on the freeway because traffic was worse than it probably would have been when I originally headed out the door to work.
I came home for lunch, salad with turkey from work, and decided to update the blog. Later I get to go run errands, have to get my bridesmaid dress altered, find a place to get my nails done & grab some school supplies for next quarter.
Then I get to come home and study study study study until time to go to bed. I am working 7:30-2 tomorrow and then have finals from 5:30-10:30pm. Anyone have any No-Doze I can borrow?

Sweet SIXTEEN Baby!

They have made it to the Sweet Sixteen and are now headed to Tempe, Arizona where they will face the Minnesota Golden Gophers (gophers? hehehe) on Saturday.

Alterations
Last night I did a search for Alterations in Dallas and found a lady who lives not far from my apartment who does bridal and other alterations, and she makes original pieces. I was over there about an hour while she fitted my bridesmaid dress. It should be ready Friday at 2pm. I also plan to have her alter a few other items, and hopefully my entire wardrobe after I lose about 40 pounds or so.
Last night I also signed up for the 60-Day Gut-Buster Boot Camp at Private Workout. I need to get some exercise and movement into this diet plan & the free tanning with the program was a good incentive. It's either that or a couple of cases of spray on tan before I can wear that Wisteria bridesmaid dress and my white arms not blinding the audience. My first appointment is at 5:00 on Friday.
Also, on Friday I have a job interview at 10am and I need to find a place to get my nails done for the wedding.
Ok... I'm going to hit the books, finals start in two hours.

Studying and Paying Bills
Well I spent most of today studying and attempting to pay bills. Since I am still trying to recover from being unemployed for 3 months... paying bills is not as easy as point and click. The rest of the day I spent working on study guides for my finals I have on Wednesday.
About 8:30 I decided I was hungry and I made Apricot Chicken, so now I have leftovers for the rest of the week. That is always nice when you are busy, to have something already cooked.

Spring Break Traffic and Finals Ramblings
Note to self: Don't ever attempt to drive to Dallas on the last night of Spring Break again!
I left my parents house at 6:45 last night. 2 Hours and 50 minutes later I arrived at my apartment in Dallas. This is a trip that normally takes about 1-1/2 hours without the Spring Breakers constantly switching lanes because the other lane moved up two cars and then switching back when that lane stopped up. It took me nearly an hour and a half to get to Hillsboro.
When I finally got home I unloaded my car and straightened up my apartment. After a few games of Lottso I headed to bed about midnight. I slept pretty good until I realized that I forgot to turn off my morning backup alarm clock on my cell phone, which went off at 5:45 this morning. Then at 7:20, work called to see if I could work today. I had to regretfully tell them no because today is my only day I can really study for my finals that start on Wednesday.
I have my Sanitation final at 5:30 on Wednesday, my Concepts final at 7:30, and then the first half of our Skills Practical Exam after that. Then Thursday at 1:00 I have my management final and then at 5:30 I have the last half of my Practical Exam and then I will have completed my FIRST QUARTER OF CULINARY SCHOOL. We are off for Good Friday, which is the first day of my "spring break."
Going to study for Sanitation. I'm sure procrastination will produce more postings later.

Baseball Upsets And Women's Basketball Truths
Tomorrow's Baseball America's Top 25 List should see the University of Texas drop out of the # 1 spot. After being ranked #1 for just one short and shining week they had the Bears of Baylor drive down to Austin and then they drove in some runs. Friday night the 16th-ranked Baylor Bears beat the #1 Texas Longhorns 3-2. Then Saturday evening, the green and gold ran the bases 9 times to the burnt orange's 1. Going for the Sweep, Sunday's final score... Baylor 4 - Texas 3.
Yesterday, on my way to "TheArmpitOfHell" I listened to my #2-seed Baylor Lady Bears whip up on 15th-seeded Illinois State Redbirds in the first round of the 2005 NCAA Women's Basketball Championships. Baylor scored 17 points before Illinois State even made a basket. The final score was 91-70. Later that day #10-seed Oregon upset #7-seed Texas Christian to make it to the second round. Sophia Young, Steffanie Blackmon and the rest of the Lady Bears will be beating up on the Oregon Lady Ducks tomorrow night at 8pm, earning a trip to Tempe and one more
step closer to the Final Four. Yeah Baby. AAHHH Sic' Em Bears.

"TheArmpitOfHell" and Fixing Computers
I got to "TheArmpitOfHell" about 3:30 yesterday afternoon. My mother and I went straight to Pat's Gowns to pick up my dress for Barbara's wedding. We had perfect timing because Tracy, Darvin and Barbara were there. I took some pictures of her in her dress, but I'm not posting them in case a sneaky groom starts reading my blog.
After picking up the dress, we went shopping for shoes for the dress and I found a new purse. I needed one since the one I have been carrying, the lining is all torn up. Then we drove back home where I quickly changed clothes and then raced back to La Fiesta for the shower. We were there for about two hours and then I came home and fell asleep on the couch.
This morning my mother woke me up by walking thru the motion detector, forgetting that my dad had turned it on when he left for work at 4am. He got home about 8:30 and I got up and started attempting to fix my mother's computer. She has multiple problems with her machine and I think I got two of them fixed, at least temporarily.
First of all, she is quickly running out of space on her 6GB harddrive. I bought her a new one but I cant seem to find all the software she claims she kept so I haven't installed her new 120GB harddrive until I can find a friend who has Ghost so I can just copy her old drive before I put it in there. I went thru most of her drive and deleted all of her temp files, internet files, my account on her computer and then I compressed all the files that hadn't been accessed before January 2004. She is now up to 698MB free and hopefully that will keep her content until I get back in two weeks.
Secondly, she hasn't been able to print for a while, err, actually, since I moved to Dallas. I uninstalled and reinstalled her printer when I moved but I think I had a bad install.exe file because it showed the Lexmark software running in the taskbar, but it didn't show that the computer had any printers installed and couldn't find it when it searched. I ended up going thru the system files and deleting every Lexmark file I could find, redownloading the drivers and starting over. Finally, the woman can print, at least that's one less thing she can complain about.
Lastly, she started complaining about a month ago that she has started receiving some "not-so-nice" emails and she wanted them stopped. I downloaded the new Beta version of Microsoft AntiSpyware and ran it. She didn't have any spyware on her computer so I wonder how she got on whatever mailing list she is on. This download, however did create a problem, that everytime you try to open a Microsoft Office Application it attempts to run Microsoft Installer and wants the Office CD. This CD just happens to be somewhere in Dallas in a box I apparently haven't unpacked yet because I cant seem to find it. I am hoping I can find the CD before I come back, because she is NOT going to be happy about having to cancel the installer everytime she tries to open something.
About 4:30 I finished working on her computer and I started getting ready to come back to Dallas. I noticed that my cell phone showed two missed calls and I had voice mail. I quickly found out that our meeting at Panera Bread at 7:30 this evening was canceled and that since I am off tomorrow I don't have to drive back tonight with all the spring breakers returning to Dallas. My cousin is in Dallas and was expecting me to go out with her and her friends this evening, and I may still go back, but at least I don't have to worry about being late to my meeting.
I have some pictures from the shower last night and I will post those when I get back to my apartment, I didn't bring my camera dock with me.

Well it's Saturday morning and I slept a little later than I had planned. I am going to hurry and get ready and head to "TheArmpitOfHell". I wanted to get to MRC before they close at 1pm to see if I had lost any weight this week. Then I will go get my dress for Barbara's wedding and have it altered. After a little R&R, I will head over to La Fiesta where Barbara and Richard's dinner/shower is being held tonight at 6.
Tomorrow I will head back to Dallas fairly early as I have to go to a mandatory Bread Bash employee meeting at work at 7:30. I also need to get back because FINALS start on Wednesday and I have got to study up so I can finish this quarter strong. I will post more from "TheArmpitOfHell".

Culinary School And Diets, A Hard Combination
Today was the first day of a mini-vacation from work. I, so far, have never worked on a Thursday since it would be against the point to have to leave in the middle of lunch to get to my 1:00pm class. I woke up this morning, finished some homework including the extra credit for my management class that only three of us remembered to do, ate breakfast (cheese toast), ate lunch (salad), and then went to class. I, again, was doing pretty good on the diet thing... and then I went to my evening class.
What was base of the presentation for our first plate? Buttered Pasta! Oy vey! I ate the Chicken Cacciatore and did my best to not pick up any noodles. Then came Pot Roast with Rice. I was still pretty good and only tried a couple of bites of the rice while we were cooking it to check on the seasonings before we presented them. Since this is week one of the diet, I am hereby making a mental note to take my "fat-blocker cheat pills" with me to class, because although I am on a diet and can exhibit some willpower by not eating our plates when we are done, I CANT present a plate without first tasting the item to adjust seasonings, since that is one of the major things we are graded on.
It is nearly 1am and I am headed to bed. Tomorrow my mother will be in town and together we will be meeting and eating lunch with the two little girls for whom my mother babysat when she was younger and they were the flower girls in her wedding. They aren't little girls anymore, but then again, neither am I. Although I am my parent's firstborn (and only for that matter,) both of them consider T & T their older daughters.
The younger T's birthday is tomorrow and we are going to get to celebrate with them. Since the older T doesn't eat anything "that had a face or came from something that had a face or who's mama had a face," if she can find something to eat then I am sure that I should be able to find something worthy of my diet for lunch.
Tomorrow should prove to be a fun but busy day and I will be back online and post more tomorrow evening.

Diet Day Three
Ok. I did pretty good yesterday, until dinner that is. And yes I know, I am going to be expecting quite a few internet "slaps" after this one.
Yesterday I got up and went to work, took my cheese toast, my protein shakes and my water with me in my huge ice-chest-like lunch box. I came home from work and ate lunch, salad with turkey, gorgonzola and tomatoes with light peppercorn ranch. I then went to work to complete my sanitation project that was due yesterday evening and then I went to class.
Then the diet went down hill for the day. I went to dinner with a friend I hadn't seen in a long time. We ate dinner at Chuy's and I had Chicken Enchiladas with a green chile sauce on them. I did drink all of my protein shakes and I did actually drink all 64 ounces of water yesterday. I also quickly took my cheat pills when I got home from dinner, hoping by some miracle of science that those two little white pills would somehow absorb some of the fat that was in my dinner.
Like I said, this is going to be a day by day process and I know that I'm going to get off of the diet sometimes, but as long as I am able to limit it to once or twice a month.. and at least be good the rest of the day, hopefully one dinner wont kill it.

Believe It Or Not...

Oops, sorry, got a little side-tracked on my way to making the announcement of the good news I got today.
Here Ye Here Ye.
If you have been reading my blog for a few weeks you know that I got sick about 3 weeks ago and missed all of my classes one Thursday because of a 102 fever. You also know that I had a term paper due that day that I was fretting over something awful. I got up that morning, sick as a dog, and wrote my paper and emailed it to my instructor.
Well, today when I got to class, she announced that our first order of business was for her to pass back all of our papers that she had been collecting for the past 10 weeks and hadn't passed back hardly anything. She also prefaced the passing back of papers with a "two of you do not have grades on your term papers, and if that is the case you need to come see me either during break or after class." This announcement made everyone nervous and you could see it as we walked to the front of the class to pick up our papers that we didn't want to see the grades on our papers.
I got mine and walked back to my desk. There was nothing on my cover page, so I went to page two, there were only two red marks, so I flipped to page 3, nothing, page 4, nothing, page 5 she said "great analogy to a real day in a restaurant." I made it to the last page and there was a big paragraph at the bottom of the page. My heart sunk, I didn't think that was a good sign. Until I read it.
"I enjoyed reading your paper. You did an excellent job summarizing the book that you read and brought the book to life with stories of your experiences in the hospitality industry. Good luck in your endeavors." and then the grade.
10 out of a possible 10!!!!!!!
AND! I was one of only three people in the entire class who remembered about the extra credit assignment she gave us last week... so...
Needless to say... "I'm walking on air, I never thought I could feel this free".... oops, I did it again.
10 bonus points to the first person who correctly identifies the song that is stuck in my head.

Thanks for the Support
Thank you SillyNessa for IM'ing me and bugging me, just like I had asked, about my not posting yesterday.
I had a long day yesterday. I went to work at 7am, and yes I actually got up in time to make my normal diet breakfast - 1 slice of 40-calorie toast with 2 ounces of cheese melted on it. I tell you one thing... 2 ounces of cheese is a hellofa lotta cheese for one slice of bread. At work, when I took my break, I sat down and drank two of my protein shakes and a bottle of peach Fruit2O. I love that stuff. I swear I am going to be one of the first recorded cases of Splenda death.
I ordered a classic cafe salad (ie, normal garden salad with balsamic vinagrette) with turkey and I came home and ate that for lunch with two plums. And then I went to my interview at the employment agency. That seemed to go pretty good once I got there. The directions I was given just said "Tollway," and I didn't realize that there were TWO tollways in Dallas. So I got on Bush Tollway and drove, and drove and drove and finally called and turned out that I had driven about 5 miles too far north and about 5 miles too far west. But once I got turned around I found it pretty easily.
After the interview I got a call from my cousin Kara who was driving back thru Dallas on her way to Mexia. I hadn't gotten to visit with her since her engagment in January so we met for dinner last night. She had been wanting to try Panera Bread so we just went to my work to eat. So for dinner I had a Bistro Steak Salad, I tried something new. It is a salad with field greens with gorgonzola cheese, steak, tomatoes, cucumbers and the same balsamic vinagrette. It was great.
Well, I did get all four of my protein shakes but I only made it to 44 ounces of water. 20 more to go. Tonight I have class, and since we sit there for 5 straight hours I will have a couple of bottles of water with me and I hope to catch up to my 64 ounces today.
I didn't post last night because I basically passed out on the couch. The thermostat in my apartment SUCKS and doesn't understand the fact that when you set it to 74 and turn on the heater, it is supposed to stop heating at 74. When I woke up about midnight or so I was so hot I could barely breathe, the thermostat was reading over 90. I ended up sleeping with the sliding glass door next to my bed open all night because my AC isn't the greatest either. I called the front office today to complain, again. Maybe before I graduate in December 2006 they will have my air conditioner and heater and thermostat fixed.
Will post day three this evening. I need to get some lunch and go finish a project before class at 5:30. I will be in "TheArmpitOfHell" on Saturday and I hope to go weigh in at MRC. I would love to see a 2 pound drop, but I'll take what I get. I have two more weeks until Barbara's wedding and then until July 6th for Kara's.

Accountability - Day One
Ok. I did pretty good today for the first day of my diet. I did have a pretty bad dinner but it was my last trip thru a drive thru at 10pm after spending the previous 90 minutes at the grocery store. Let me just tell you, coupons are a royal pain in the butt! It takes forever to go shopping when you are dealing with coupons, but once you count my Kroger card and coupons I saved $19.71.
For breakfast I had a slice of toast with that "I Cant Believe Its Not Butter" spray and sprinkled with cinnamon and splenda and I had two boiled eggs. I hope this doesn't mean the sickness is coming back.
After spending the most of the morning sending out resumes like crazy and cleaning my apartment, I got out and ran a couple of errands on this beautiful but cold day and grabbed lunch at Subway. I had a Chicken Bacon Wrap with no bacon and all of the veggies except lettuce.
I came back home and went back to work on the resumes and the job search. I did get one response, and I have an interview at 3:30 tomorrow, say a prayer. I then finished going thru all the coupons from Sunday's paper, putting them in my organizer and then made myself a grocery list.
I left at 8:30 to go to Kroger and $92 and 90-minutes later I left there and went to Long John Silvers for dinner. I had a coupon for lemon baked cod, but the location I ended up at didn't have the baked options. So, I had my one cheat for the week and used another coupon for 1 fish, 1 chicken and 3 shrimp with cole slaw. I didn't eat the fries or the hush puppies.
I have taken all of my vitamins but I only got two protein shakes down instead of 4 and I still gotta drink 32 more ounces of water before I go to bed. This diet requires that I drink a whole lot more than I am used to and last time I went on this diet it took me a few days to get to where I was consuming all four of the shakes and the 64 ounces of water.
I am supposed to be at work at 7am so I am going to try to drink a little more water and head to bed. Hopefully I will do better tomorrow. I am just going to have to take this one day at a time.

The Diet Is Back!

For most of you that have known me for a while you know that I went on a major diet in May 2003 and I lost quite a bit of weight by August. Most of the success of that diet was the fact that I spent 3 1/2 wonderful weeks in Houston. I was so sick of living in "TheArmpitOfHell" that I didn't know what to do.
By January 2004, I had changed jobs, working with quite a few people who were emotionally draining. In June, my dad lost his job and in November I lost mine. I basically hit a rock-bottom old-fashioned case of depression.
It took most of 2004 but I successfully gained back all that weight that I had lost. Last week when I was in "TheArmpitOfHell" I dropped by Metabolic Research Center, where I had gone for diet counseling back in 2003 and I was 2 1/2 pounds over what I was in May 2003.
Today is March 14, 2005 and I am going back on my diet. I am in a new city, new life, and am ready for a new body. I am hereby enlisting the help of all my friends to keep on me about succeeding at losing 40-50 pounds and keeping it off this time.
I am supposed to turn in my meal diary to MRC weekly and I'm also going to post it on here for some accountability. I truly expect for any of you to reach out and electronically "slap the crap" out of me if I get off the designated path. I thank you all in advance for your help.

Aching Feet
It's 4:45pm and my feet are killng me. I am definately going to have to start searching for some new work shoes. I was originally scheduled to work from 12:00pm - 5:00pm today. Long ago, as if in a dream, I heard my phone ring at 6:45 this morning. I was sleeping so good that I really did think it was in a dream, until I heard my cell phone ring a few minutes later.
It was work, they had one person call in sick and another who had been at work since 5:30am and they were fixing to send him home sick. I answer the phone and I hear, "I know you aren't scheduled until noon, but, could you come in early?" After asking exactly how early she had in mind, I was quickly informed, "now." I said that I would be there around 8ish as I had to take a shower and get my uniform out of the washing machine.
So, I clocked in at work at 8:25 this morning. About 9:15 we were slammed and I was again thanked for coming in early and bailing them out. Apparently there was a St. Patrick's Day Parade on Greenville Avenue and they used North Park Mall parking lot as the home base for the parade. I believe we fed every person who was in or went to the parade today, and they all decided to head to Panera Bread in groups of 50.
Usually, when you work a 7-1 or 8-2 shift, you get to sit down and take a break and eat a bagel or something before the lunch crowd hits. My 8:25 - 4:15 shift and when did I get to take a break? 3:10pm. I had a Roast Beef, Gorgonzola, Horseradish & Avacado sandwich and a cup of soup. YUM.
It's 4:55 and it is an amazingly beautiful day. The thermostat in my car said 89 degrees and there isn't a cloud in the sky. This is a day I wish I was in "TheArmpitOfHell" because I would either go down to Cameron Park or Baylor Campus and sit outside and read a book or study for finals. I'm sure there are plenty of pretty parks here in Dallas but I dont know where they are and by the time I found out where it was and drove there the sun would be going down. So, I guess I am going to go sit out on my patio and enjoy the warm breeze and blue skies.
I better enjoy it today and tomorrow because Monday - Wednesday its supposed to be back in the 50s and rainy. No wonder everyone I know is getting sick. 90 one day, 40 the next. I'm ready for a good old fashioned summer, where you know that its going to be 90+ for the next 4 months.

Week Nine and Counting
Friday, March 11th.
Last day of week 9 of my first quarter of culinary school. I have a much needed day off today. I slept until 11 and I cant tell you the last time I did that. It was wonderful. I got up and caught up on the daily news on the internet and then started working on my study guides for finals.
At some point between now and 5:30 I will have to get dressed and go to Panera, pick up my paycheck and finish my last project for my sanitation class, a "mock" health inspection, and a quick run to the bank before class.
I am ready for a new quarter, new classes, and a new start. I have to survive tonight and next week (which looks like will only be review) and then finals will be upon me. I will have finals on Wednesday and Thursday and then we will be done and have Good Friday off.
Last night we made Poached Chicken, with Risotto Milanese, Sauteed Spinach and Grilled Yellow Pepper and Red Onions for our first menu. The second menu was Fried Chicken with Cream Gravy, Garlic Whipped Potatoes, Tourned Carrots with a Maple Glaze and Asapargus Almandine. Darn it! I forgot the dumb camera again. Someone needs to start reminding me every Thursday to take my camera to class.

Slow Week
This is my recuperation week. I'm only scheduled for 22 hours this week and I have all of my homework done for the rest of the quarter so I'm taking this opportunity to be a bum!
Sunday was work from 8 - 2 which was pretty much non-eventful and I came home and did not a whole heck of a lot of anything.
Monday I worked 7 - 12, after I got sent home early from work, spring break is this week and we just haven't been very busy. I came home from work with a cleaning bug. I cut out coupons from the newspaper, made a grocery list and went shopping and ran a few errands (Walgreens has 3-15packs of bottled water on for $8.00). Came home and did about 4 loads of laundry, cleaned the kitchen and the living room and the bathroom and my room, and then started packing to go home to "TheArmpitOfHell" for the night.
I left Dallas about 8pm and drove to "TheArmpitOfHell". Tuesday I took my grandmother to her weekly beauty shop appointment, went to the bank, went to Metabolic Research Center to get a starting weight on my diet I am going back on starting tomorrow, went to Pat's Gowns to try on the bridesmaid's dress for Barbara's wedding (they changed dresses), and to try on and order the bridesmaid's dress for my cousin Kara's wedding in July. I went home and ate lunch with my dad and headed back to Dallas.
I had originally planned on staying in "TheArmpitOfHell" Tuesday night and driving back in time for work this morning, but yesterday morning I got a phone call from txredgirl, who was in Arlington. I hadn't seen her since she moved to Maryland in October 2003 so of course I changed a few plans and headed back so that I was able to meet Jennie and Red for dinner last night at TrailDust Steak House (don't wear a tie) in Arlington. After dinner I went back to her hotel room for a little while to talk and catch up and then I headed home.
Work was not real eventful again today, we were slow since it is still spring break. I hate work when its slow because it makes the time pass by at such a crawl. For those of you who have never worked in a restaurant, it is a lot more fun when you are getting slammed than when there isn't a line of customers out the door.
Tomorrow, Comcast is supposed to bring me my DVR that I ordered in January before I even moved here. Everything about my experience with Comcast has been a long comedy of errors, although it has gotten to the point where it's not funny anymore.
Friday I have the morning off and I'm not quite sure I know what to do with myself until 5:30pm. I have one project left for my Sanitation class, I have to go inspect a restaurant, and I am going to inspect work at some point Friday. I am also planning on having about 100 or so resumes printed out and I'm going to go around to area businesses (office parks) and see if I can find a full time job. I love working at Panera but its just not paying the bills. I need a fulltime M-F 8 - 5 salaried-office position. Say a prayer that I find one and soon.
That will be the end of Week 9 of school. After that I will only have one more week of class and then Week 11 is finals. I hope I'm ready, and I am really looking forward to my "Spring Break."

Happy Birthday Jennie

As I was leaving work Friday afternoon, Clinton called and asked if I was busy Saturday night. It was Jennie's birthday and he wanted to get a group together to meet for dinner and surprise her.
I was supposed to work 11- 3 on Saturday but ended up working something a little closer to 10:45 - 4:15. A quick trip home to freshen up and change clothes into dinner party attire and off I went on another excursion into the confusing world of Dallas freeways.
After getting a little lost I arrived at Texas Land and Cattle Company around 7pm and the 7 of us enjoyed a wonderful dinner. It was good to see Jennie and Clinton again, I hadn't seen them since I came up to Dallas for pre-registration for classes in November. We stood up and acted like we were leaving about 9pm, but we ended up standing on the patio and talking a little while longer, I finally made it to my car a little after 10 and drove home.
It didn't take me long to get home and straight to bed, this old woman had to be at work at 8 the next morning.

Forgot My Camera
After our guest speaker in Management I drove home to change into my chef's uniform and eat a little lunch before driving back to class at 5:30. Apparently the chef instructor decided to switch our groups last week because when I got to class everyone was standing at a different table than they normally are at. I was moved from table 6 with Jennifer and Daniel to table 5 with Chris and Tim.
I realized about 10 minutes into class that I had forgotten my camera and I started kicking myself. I had attempted to remind myself numerous times during my 90-minute break at home but my senility had other plans.
Tonight we made two completely different menus, plated the first one up and presented them to the instructor, ate our results, cleaned up the kitchen and then started the process again for the second one.
Our first menu consisted of a Chicken Saute with an onion, garlic and tomato sauce, Polenta, and Vegetable Noodles (zucchini, yellow squash & carrots cut into small spaghetti-like strips and sauted in butter.) The second menu was Chicken Kiev with Lemon Supremes, Broccoli Hollandaise, Grilled Tomatoes and Brown Rice Pilaf.
The Chicken Saute was good. I'm not very fond of Polenta (basically cornbread batter without the cream (or milk), cooked until there is no moisture, chilled, cut with cookie cutters and deep-fried) and the Vegetable Noodles would have been great if we could have left out the carrots.
I dont know what it is about culinary school but they want to put carrots in EVERYTHING. I hate carrots. The Chicken Kiev was great and I think I might make some of that here at the apartment for dinner one night soon. Lemon Supremes are basically just the little segments cut out of a lemon. The Grilled Tomatoes had marinated in balsamic vinegar for about an hour, the Brown Rice Pilaf was better when we made it 3 weeks ago with the spicy pecans in it, and I love broccoli but I have decided I really dont like hollandaise sauce. It just messed up a perfectly good green stalk.
I have my camera set out by my purse so I wont forget to take it tomorrow night. We are making Pork Cutlets and Pork Scallopini Picatta. That should be interesting. If any of you would like the recipe for anything I have made this semester just let me know. I have them all typed out on 4"x6" index card formatted Word Docs that I would be happy to email you.
Ok, now that I have my blog caught up to date I am going to bed. I am working 7am - 2pm tomorrow and then will have lab again from 5:30 - 10:30.
Week 8 is just about over.... Stay Tuned for Week 9 and 10 Lab Creations and My Stressful Ramblings during Week 11 - the dreaded week of finals.

Just Three More Weeks and Registration
As of next Tuesday I will have only been in Dallas for two months and at that point I will only have three weeks left of school. Maybe if Baylor had been on the quarter system my grades would have been better.
This week started off with me going back to work on Saturday, Sunday, Monday, Tuesday and Wednesday. As of 2pm on Wednesday I had worked 27.5 hours since the "work-week" started on Sunday and still have to work 7-2 on Friday and 11 - 3 on Saturday. At least I know they wont try to call me in early on Saturday or ask me to work late because since they are a corporate store, they probably would get in trouble for paying me OT.
Last night I went back to class. It was the shortest Wednesday night class we had sat through all quarter. We were out by about 10 after 8 and after the past two weeks I decided I was going to take myself to dinner. I went to Cheddar's. I love their Crazy Nachos. I also got something called a Painkiller. The menu says they limit customers to two of them and I can see why. I came home after dinner and went to bed and I slept better last night than I have in weeks. I even woke up about 5am and I was in the same position I was when I fell asleep and that almost never happens.
You know you slept good when you wake up and automatically think, "Oh Crap, What Time Is It? How Late Did I Sleep?" and it's only 8:20am. I got up and finished some homework for my Management class and then headed off to class. Since Wednesday night they had completely blocked off the parking lot, forcing us all to park in the new parking lot. This made me a little late (2 minutes) to class but I wasn't the only one and after we explained the new parking situation she didn't seem too upset.
We had a guest speaker the second half of our three hour class so she gave us a break about 2:20. During this time I had to 1) go get a parking sticker for the garage and pray I hadn't gotten a ticket already; and 2) go to academic advisement that I had to postpone from last week and then get back to class before our speaker was supposed to arrive at 3:00.
I made it to my car before they gave me a ticket, but I was out of breath by the time I got there. The elevator is on the complete other side of the garage from the 3rd floor crosswalk to the school and I had parked on the 6th floor. Then I had to walk back down and then out to the culinary building and up to the second floor for advisement.
Apparently they had changed the class times from what was posted on the website, but I am registered for all the classes I wanted, they just got switched around a little. Next quarter starts on Monday April 4th and I will be taking Menu Management on Monday evenings from 7pm - 9pm and Regional Cuisine on Tuesday, Wednesday and Thursday evenings from 5:30 - 10:30pm.
I will also have Restaurant Law and Ethics. According to the class schedule they had posted on the website this course was going to be offered on Saturdays from 8am - 3:30 pm. I wasn't too excited about that schedule although I had to take another class to have a full 12 hours for financial aid, but I found out today that it is actually an online class. The online courses are either offered for an entire quarter or half of a quarter (called a session.) This class is offered during second session so I dont even have to worry about it until May 18th. That is just too cool!

Illness Over. But Not Before Two Days Of Fever and Bedrest.
Howdy all.
I have been fielding emails and IMs wondering why I haven't posted anything in a week. Last week was just crazy with school work and getting sick. Unfortunately, blogging was the last thing on my mind. But I'm back and re-energized for the last three weeks of school.
Last Monday, I got to work at 8am and we were so slow and I was already feeling pretty bad so they sent me home about 8:10. I came home and took my book that I had to finish reading for my term paper and went out on the couch on the patio to read. That worked pretty good until about noon when I fell asleep. It was just such an amazingly beautiful day outside that I guess I was enjoying being out there a little too much. When I woke up I ran a few errands, and then came back home and started reading again.
Tuesday I worked at Panera and then came home and headed back outside to the couch. I told myself I couldn't go to bed until I was finished reading the book. When I finally finished about 1am I was so tired that I just fell asleep right there on the patio. About 4am I woke up and went inside and actually went to bed.
Wednesday I went to work, and then went to class at 5:30. After class I came home and started typing out my outline for my paper, the quotes from the book I was going to use and formatted the word doc with a cover sheet and got my bibliography done. About this time I started feeling really nauseous and feverish. I took my temp and it was nearly 100. I decided that was a sign and I went to bed.
Thursday I got up early to type my paper. I was still running fever but now I really had an upset stomach, and the NyQuil quit working. I finished my paper with plenty of time to spare, but I made the depressing decision to stay home that day. I emailed my Management instructor my paper and went back to bed. I also missed Skills that night, so I don't have any pictures of the Roast Chicken, Roast Beef, Beef Tenderloin or Chicken Sausage Gumbo that they made.
Friday I was still sick and decided I was just going to stay home one more day to get well so I could finish the semester off and get everything done and not prolong this sickness.
SEE I TOLD YOU I WAS SICK WHEN I STARTED EATING EGGS!
