SPD.. My First Installment

Well, according to SillyNessa today was supposed to be SPD (Self-Portrait Day for those of you who haven't been checking out those I've blogrolled). Today was supposed to be a self-portrait of funny duds but I didn't have anything that I can fit into that I would say would qualify. But I figured as long as the Silly One could post her prom picture, I would do the same.

May 8, 1992. Nearly 13 years ago... WOW.

And I have to say.. although fashions have come and gone, I had the prettiest dress at the prom and I personally don't think that it looks that dated. It also had a matching long sleeve short jacket with sequins explosions all over it. Don't know why I didn't get a a picture with the whole dress on.

Our theme was Puttin on the Ritz. BBM and I started our evening off by meeting at the home of SF with BLW, HMM and J to catch up with our limo. Then it was off to a great dinner at Vargo's in Houston. Our prom was held at the Majestic Theater in Downtown Houston and was a great night complete with horse-drawn carriage rides thru downtown. As soon as we got to the dance, those 3" heels were kicked off across the room. The sequins all over my shoes kept scratching the skin off the top and sides of my feet.

More Of The Same

Today was a little bit more of the same. Sitting around at my desk, doing homework, reading blogs, and waiting to be given something to do. I guess they dont realize they are paying me to sit here but I guess I wont argue. Although, it has certainly taken a toll on me... so far, this week has been a lot harder than I expected. I do not like to be bored and I cant stand to just sit and wait and wait and wait. I have drank more coffee in the past three days than I have in probably the last three years trying to stay awake at my desk.

Deep South and Floribbean Menu - Half Postponed

Well the preceeding pictures that I posted from tonight's visit to the foods from the Deep South and Floribbean cuisine completely cover what we were actually able to finish within the time constraints of tonight's class.

Tongiht we made Tuskegee Peanut Soup and Shrimp Awendaw with Grit Cakes. We also started Carolina Cole Slaw, Cold Potato Salad, Carolina BBQ Sauce & Carolina Pulled Pork. Cole Slaw and Potato Salad are two of those items that just taste better after they have had a chance to sit overnight and let the flavors mingle. And we started smoking the pork about 7pm and it wasn't ready when we left at 10:30.

So! I should have quite a few pictures to post tomorrow evening. Not only will I have our Carolina-based BBQ dinner left over from tonight, we will also be preparing Black Bean Soup, a Black Bean, Jicama and Corn Relish, Chayote with Tomato, Mushrooms and Cheese, Chicken with Tamarind Ginger Sauce, Pan-Seared Grouper and Corn Custard. Check back either late tomorrow evening or Thursday for updated posts and pictures of the rest of this Deep South menu.

Nothing To Do... Day Two

Today I arrived at work at 7:30. No one else was there so I started setting up my address book on LotusNotes.

There are three people who are supposed to be in charge of training me, two of them were in a meating all day long and the other one had a time-sensitive project that she had to finish. About 11am I was finally given a job manual that was created by the girl who left my position in January.

About 12:30 I took another one of my "lunch hours" to do more homework and then about 2:15pm I was finally given a project to do. I was given a hard copy of an excel spreadsheet that had changes written on it that she wanted me to go through the file and make all the changes. She told me to take my time, and I thought I did! Until I took it to her all finished and she told me that I work too fast. About 10 minutes later she gave me another one and I was told to SLOW DOWN.

At 4:30 I left the office and bravely set out on my journey to get to class on time during Dallas rush hour traffic. I made it to school about 5:10 and changed into my uniform in the bathroom.

After class I came home and began working on updating my blog. I will pack my lunch and be heading to bed in the next few minutes. Two more days of working 7:30 - 4:30 and class from 5:30 - 10:30.

As my friend txredgirl so eloquently says... We Can Sleep When We Die.

Well.. a temporary death awaits me, will resurrect myself in the morning.

First Day At "TheLiquorDistributor"

Day One of Crazy Week is over.

I arrived at "TheLiquorDistributor" at 8:30 this morning. They showed me to the two open cubicles and said I could choose where to set up my desk. After a few minutes I realized that I had been left alone to set up my desk that was pretty much already set up.

About 9:15 they said the lady from HR was going to come get me and get me set up on paperwork, etc. and new employee orientation and that they really didn't want to try to start training me on anything in case she came and interrupted what we were doing.

At 10:00 the IT guys came down to set up my computer and then started installing all the WindowsUpdates that looked like they hadn't been done in a year or two. All the while, I just kinda sat there waiting.

After my computer was finished where I could log on, I took my "lunch hour" and finished up some homework that was due last night. Then realized I hadn't been set up on the mainframe computer and that after they did, that I would have to wait until tomorrow before it would refresh and see the change.

At 3:30 the HR lady finally came and got me, handed me paperwork and sent me back to my desk to fill them out. I took them back to her and that was about all there was to my orientation.

About 5:30 I went home, having accomplished just about NOTHING on my first day of work.

I had class at 7pm and I got home about 9:15. After a little dinner and repacking my lunch kit and stuff for tomorrow I am headed to bed. Night All!

Shopping Spree

This morning about 9am Panera Bread called and informed me that they had too many cashiers scheduled and that they were calling to give me the option of staying home. I gladly took them up on their offer and decided that this was going to be "my day". A day of doing nothing but what I wanted to do and to actually get out and about and see what I could see in Dallas, something I haven't really had a chance to do much of since I moved here.

About 2:30 I filled up my car with gas and got a car wash... I guess if it rains tomorrow it will be all my fault. Next I went to Fadi's Mediterranean Grill for Magic Juice. Then I went shopping at one of my favorite places, a computer geek/OCD organization freak's dream store... Office Depot. Then I went to a Nursery and bought 4 clay pots, potting soil, and 4 plants of Basil, Garlic Chives, Oregano & Thyme and I am going to start a small herb garden on my patio.

I took the plants and stuff home and then I went to SuperTarget, Bath & Body Works, Godiva, and Williams-Sonoma before I ended up at Panera Bread for dinner. I found a large table where I spread out all my lists and coupons and made my grocery list and what I was buying at which store. After dinner I then headed to SuperSaver, Walgreens, CVS Pharmacy & Kroger.

I got home about the time I should have been heading to bed for my new job, instead I got to unload my car and then start cooking Chicken Okra Gumbo to pack for my lunches this week and finishing packing and getting ready for my first big week.

Life Organization and Spring Cleaning

Today was spent doing the "flight of the bumblebee" dance in a wild attempt to get my life organized for the logistical time puzzle that will become my life on Monday.

I am starting my new job Monday morning at 8:30 and I will have to have my car packed with everything I need for class each evening since I probably, with the traffic, not have time to come home between work and school. I will also have to pack a lunch each day because there is next to nothing around the office that would fall under the category of food, even McDonald's is a good 6 or 7 mile trek.

Wedding Shopping in Denton

Saturday morning about 3am my cousin K called and said that she was lost. Ten or so minutes later she arrived at my apartment and then we stayed up till nearly 5am talking.

K is getting married in July and, some how, and I'm not quite sure yet how this happened... we woke up about 9am, got dressed and headed to Denton armed with a massive checklist of stuff we needed to get done for the wedding. As soon as we arrived in Denton we met up with her future mother-in-law and sister-in-law at a hotel. What is the best way to start off a day of wedding shopping, why of course, LUNCH!

Now, sufficiently nourished, we headed off to probably the most fun of the items on our agenda, at least for me... CandyHaven where we were given the opportunity to sample about 8 different types of wedding cakes, complete with the fruity fillings and different icings and chocolate dipped strawberries. After selecting the cake, we drove to Lewisville where our attention turned to SHOPPING. We hit two different Payless Shoes, Talbots, Garden Ridge Pottery and Academy. Our shopping excursion hit only one detour... Starbucks. Unless you didn't know, shopping is one of the best ways to create an appetite. So after we were shopped-out we took our appetites to Abuelo's where we were joined by K's future brother-in-law.

Have you ever noticed that migraines seem to hit at the most inopportune times? Just like at the wedding the previous Saturday evening, about the time we sat down for dinner, my migraine came back with a vengeance and landed right behind my left eye. I asked for a to go box and brought most of my salad home. Once the rest of the party finished dinner we drove back to Denton where I took advantage of the fact that I was not driving and took a quick nap in the back seat. By the time arrived back at the hotel, I was feeling better. K, Mom-in-law and I stood out in the fresh air, leaning on the trunk of the car going over our checklist for the day, talking over things that still needed to be done, and they made a few decisions about catering and such.

About an hour later, we filled up my car with gas... I really didn't need it that bad but it was only $2.15/gallon in Denton compared to the $2.22 by my apartment so I figured what the heck. We drove back to my apartment and quickly passed out. K got up and drove back to Huntsville about 9 the next morning and I headed to work about 11. It was a busy and fun day that offered a great break to the monotony of work and class that had plagued my week from hell. Thanks for including me in the festivities. I cant wait until the big day in July... its gonna be beautiful!

2nd Quarter - Week One

Here it is. The first week of my Second Quarter of culinary school and with my work schedule and all... the week ended up pretty much one big blur.

My new classes are going to be interesting.. and a LOT more work than last semester.

My first class, my only lecture class, is Menu Management on Monday evenings from 7:00 - 9:00pm. On top of the normal chapter reviews as homework, we also have three Menu Projects where we have to design three menus. The first one is due next week, so much for easing into the quarter nice and slow.

I have two different kitchen lab classes. One is from 5:30pm-10:30pm on Tuesday and Wednesday nights. It is called American Regional and we learn about and cook different foods that are native to different areas of our nation. Our weekly homework, includes typing out recipes on index cards, vocabulary and we have a research paper due on Tuesday of Week 10.

The first week we "studied" New England foods. Tuesday night we made Butternut Squash Soup, Cod Cakes with Tartar Sauce, Linguine Alle Vongole (Pasta with Clam Sauce), Boston Brown Bread, Fresh Corncakes, and Green Beans with Fried Onions. Wednesday night's menu included New England Clam Chowder, Mesclun Salad with Cranberries, Apples and Cider Vinaigrette, Boston Scrod with Beurre Blanc (baked fish with butter sauce), Summer Squash Noodles, Mashed Sweet Potatoes, and Boston Baked Beans. I regretfully, do not have any pictures from these two days... see previous post entitled HELL WEEK and you will understand why I couldn't remember my name, much less my camera. I promise to try to do better on getting pictures for the rest of the quarter.. and feel free to email or IM me and remind me to grab my camera Tuesday - Thursday evenings.

My second lab class is from 5:30pm-10:30pm Thursday nights. It is also a Regional class, but it specializes in just Southwestern cuisine. This class doesn't have any real weekly homework except for typing out our recipes on index cards, but we do have to do a separate research paper for this class and it is also due on Week 10.

I did remember my camera for the first week of this class and will post those pictures in a few minutes. Thursday's menu consisted of Grilled Vegetable Gazpacho (cold veggie soup), Quesadillas with Jicama Salsa, Shrimp Tacos, Pico De Gallo, Guacamole, Refried Beans, and Green Rice. This class lasted until nearly 11:15 pm the first night. The chef-instructor for this class runs his class differently than any other class we had been in before, and since we weren't even given our menus or recipes until we arrived the first day we were kinda blindsided with this new structure and it took us a little longer than the normally scheduled class time to see the light.

Anyone wanna take me out for a drink Friday night of Week 10 after I turn in those two papers?

Hell Week - BackBlogged

Well I left "TheArmpitOfHell" at 9:15 Monday morning, the trip back to Dallas being pretty uneventful. I walked into Panera about 10:45 and had 15 minutes to spare. I checked the schedule for the upcoming week that had been posted while I was gone. I nearly passed out right there.

Last week, when I was on spring break and they could have killed me and given me as many hours as possible, I think I ended up with 20. This week, the first week of my 2nd quarter of school, they schedule me for 36 hours. Our schedules are posted from Wed - Tues and I ended up giving away a Tuesday shift just for a break.

My crazy schedule this week looked something like this:
Monday: work 11:00am - 3:00pm; class 7:00pm - 9:00pm (we got out early)
Tuesday: work 7:30am - 3:00pm; class 5:30pm - 10:30pm
Wednesday: work 7:30am - 2:30pm; class 5:30pm - 10:30pm
Thursday: work 7:30am - 2:00pm; class 5:30pm - 10:30pm (we didn't get out until 11:15pm)
Friday: work 8:00am - 3:30pm; DIE
Saturday: wedding shopping with Kara in Denton all day
Sunday: work 11:00am - 3:30pm, DIE, get ready for next week

Work this week was pretty much uneventful. By Thursday, I was waking up in screaming pain. The slip-resistant shoes I had bought from ShoesForCrews to wear to in class and at work, have officially worn out any comfortable notions and my feet cursed my every step. Friday, I finally received the phone call from the employment agency saying that I had, of course, passed the Background Check and that "TheLiquorDistributor" were ready to offer me the position I interviewed for two weeks before and that they needed me to go in for a meeting on Tuesday and to take a drug test. Sure hope they aren't screening for Splenda!

Sunday at work I told two of the managers that starting on April 18th I would have to change my availability to weekends only because I will be starting a new job that day. I also got to take my first delivery that afternoon. Unlike McAlister's, who used and abused their employees in any way they could, including not reimbursing us for delivery mileage or our usage of personal vehicles, Panera gives the entire delivery fee charged to the customer to the employee who took the delivery, which is only fair and just, especially with gas at $2.19/gallon.

Both Friday and Sunday, after work, I came home and passed out. Exhaustion doesn't even come close to describing how I felt at the end of this week. Luckily I was able to talk to my manager who does the schedules and my schedule this week is much more conducive to keeping my sanity.

Sunday - Day Of Rest

What a weekend this has been. I drove to "TheArmpitOfHell" on Thursday evening, celebrated Nana's birthday on Friday, wedding rehersal dinner Friday night, Hair Appointments and other Bridesmaid duties leading up to the wedding Saturday evening, and here it is Sunday.

Today is my parent's 34th wedding anniversary. They were awake and reading three different newspapers and watching church on tv when I woke up from my migraine trance. I had barely survived taking the bobbypins out of my hair before crashing last night, and I walk into the living room greated by my dad's loving statement ... "anyone else get hurt in that wreck?"

I attempted to work on my mother's computer, which has decided that it just doesn't like life in any form, and then I went back to sleep on the couch with another round in the Migraine Ring. It didn't take long to realize I would be driving back to Dallas on Monday morning instead of Sunday afternoon. My parents bought themselves a stand-alone freezer for the garage and my dad used my SUV to go pick it up. On the way back he picked up their anniversary dinner... On The Border take-out.. they are such romantics!

Well, its time to head to bed, I have to leave by 9am in the morning to get back to Dallas in time to be at work by 11am.

Barbara's Big Day

After getting home about midnight Friday night, Saturday morning began at 8:00 and never stopped. I had a hair appointment at 9:30, and then a quick drive over to Corsicana.

About 12:15 we had a bridesmaid luncheon at Motycka's Gifts and Texas Tea House. This was a cute little house with gifts and such downstairs and a tea room upstairs. The food was wonderful and I am still thirsty for some more Strawberry Peach Tea.

Then we proceeded over to get the mall where the other bridesmaids and the bride got their hair done. After the four of us were completely decked out with our hair and makeup... and sprayed from head to toe with glitter, we headed back to the house to pick up our dresses and head to the wedding location.

Back in the Bride's dressing room, we quickly got ready and took pictures before the men were due to arrive. It was an emotional day for all of us. Barbara had a couple of family reunions that really touched her heart. The men arrived, in their Cowboy tuxedoes, and it was about time for the wedding to start at 6pm. One of the groomsmen came back and informed us that we needed more chairs for guests and Barbara just couldn't believe that that many people showed up for her and Richard's wedding.

The wedding was beautiful, a little country, but still beautiful, and everybody was crying, even the DJ. Chalee Tennison, a nashville recording artist and relative of the groom, sang "This Woman's Heart" off of her album by the same name while the bride and groom lit the unity candle.

The reception was catered by Hoffman's Party House. They have some of the best brisket and sausage around... and you dont even need BBQ sauce. The cakes were absolutely wonderful, the grooms cake was a camoflauged chocolate mountain and the brides cake was an italian wedding cake. I will post pictures in a minute.

After the music and the party started, I felt the beginnings of a migraine coming on and decided that it would probably be a good idea to change clothes and head to "TheArmpitOfHell" before it was so bad that I couldn't drive. I got home about 10pm and climbed straight into bed. My mother had to come in and help me get the 30 or so bobby-pins out of my hair. I'm sure the combination of loud music, champagne & bobby-pins brought on that wonderful migraine.

To top it off, the wonderful backwards government took my extra hour of sleep away from me. And I want it BACK!

April Fools Day

It's April 1st and my wonderful grandmother is celebrating her 86th birthday today. My mom and I took a cake and lunch over to my grandparents house. When we walked in I immediately saw 3 bouquets of flowers on the kitchen table and another one on the coffee table. My smart-a$$ grandfather pipes up and says it looks like somebody died.

After enjoying lunch and an amazing piece of cake I drifted off to sleep in my favorite lazy-boy. I swear there must be something in the air at my grandparents house that always makes you want to go to sleep. My mother says its the sense of security but I'm sure there is some sort of drug in the air.

While I was sleeping, my dad came over after he got off of work and two more bouqets of flowers were delivered. She also got a large handful of birthday cards, the mailman had to bring them in because the stack wouldn't fit in the mailbox.

I woke up about 4pm and realized that I had two hours to get to the rehersal dinner and my car was at my parents house. I took my dad's keys and drove home, fixed my makeup and drove 80mph all the way from "TheArmpitOfHell" to Corsicana.

The rehersal was entertaining, especially getting to see the preacher's expression when he was told that the rings weren't going to be on a ring bearer's pillow, but instead they were going to be on Deer Antlers. We then feasted on salad, garlic bread and chicken spaghetti and pound cake covered with strawberries and whipped cream.

I stayed until about 10pm attempting to help with the decorations, but since I was not as blessed in the creativity department as others, I decided to drive on home to "TheArmpitOfHell".

The end of a long day and just the beginning of a LONG weekend.
