Third Quarter Is
Rolling Right Along.
(hehehe, I know that was bad, but I couldn't help myself)
Monday night's Beverage class was a blast. We didn't get to drink, yet, but the
Chef that is teaching it is an absolute NUT! We started the class with the "the
people inhabiting this planet would have never gotten to where we are today
without the invention of alcohol" speech. I'm sure the teachers at my small
baptist high school in houston are turning over in the smog just hearing me say
that. Next Monday night we will be trying different teas and coffees. Then we
will spend two weeks on Beer, two weeks on Liquor and then the last five weeks
of class on wine.
Oh yeah, another thing we learned in class... did anyone know that Budweiser is
the "King Of Stupid?"
Tuesday night's Computers in the Food Industry class was interesting. It
certainly started my computer geekiness and OCD bubbling towards the surface. We
were working in spreadsheets, (my specialty) to learn how to price standardized
recipes and how to know what to charge for an item on a menu. While most people
were learning how to type =A6 in a cell, I was writing VLOOKUP formulas to the
Inventory file and started working on a conversion chart so that it would
automatically convert 1 teaspoon to 1/6th of an ounce.
Wednesday night's Career Development class is all about writing resumes, cover
letters, thank you letters and interviewing skills. This is the class I will be
sitting in for 3 hours the night of my birthday, and we have our practical
midterm that day... dressed up in interview attire and participating in
interviews that will be videotaped.
Last night's Baking class was fun, although I was hot and exhausted by the time
I got home. The Chef said that they have this problem at the first of every
quarter.. the air conditioning not being able to keep up with 4 400degree ovens
and 30 kids in one classroom. Chef went over the syllabus, etc., for about an
hour and a half and then we made Soft Rolls and Foccacia. While the dough was
proofing she lectured about the basics of baking and yeast.
The school's restaurant opened last night and she told us that while she
lectured, if we wanted to order food and eat, we were more than welcome to. I
ordered a Caprese Salad and a Cup of Mushroom Soup. The soup was good, as was
the Caprese Salad, although it seems to be getting towards the end of the
"fresh" season for tomatoes and getting closer to that "plastic version" stuff
they sell in the grocery store.

LOL! i was addicted to foccacia for a several weeks last year!;) now, it's
bruchetta.
