Ensalada de Nopalitos

Don't worry if you dont know what a Nopalito is, neither did I until I got to class. It is actually CACTUS! First you have to use a paring knife to shave off all the little pricklies. Then, when you cut them up... they have a slimey consistency somewhere between Okra and Aloe Vera. By themselves they aren't that good, and neither myself nor my cooking partner liked the dressing... but when you put it all together, with leaf lettuce, red onions, new mexico green chiles & sliced boiled egg, it wasn't half bad.
