2nd Quarter - Written Exam - Southwestern Regional


Thursday came and Thursday went. I arrived to class ready to cook, take our test
and leave. I had a long-planned date with a Great Wall of Chocolate to celebrate
my last day of this quarter and I was ready to go.

The first thing the Chef did was a review for our exam. Review? I'm not sure
that is the correct terminology.. more like, stood there and read every question
to us and then waited for us to answer them as a group, and then he elaborated
on our answers.
Then we cooked our last menu for our Southwest Regional class. In addition to
the pictures posted below, we also made Mexican Hot Chocolate and Corn-Salsa
Pita Sandwiches. The sandwiches were gone before I could get a picture and the
hot chocolate just didn't want to smile up for the camera. The Pita Sandwiches
were great and I will be making them at home someday soon and I will take a
picture and post it then.
Then we got to clean, clean and clean. My hands are so soft right now because I
basically EasyOff/Comet-scrubbed the top 14 layers of skin off of them. For some
reason, when a quarter ends.. the Chefs get this bright idea that we need to
clean the entire building from top to bottom and scrub the pots and pans until
they shine.
We were done cooking and eating well before 9pm and the chef didn't pass out the
exams until about 9:45. It test didn't take any time at all to finish, since we
had just gone over the exam in order about 4 hours before. As soon as I finished
the exam.. as fast as I could get my fingers to write, I headed home... took a
very very quick shower and headed to PF Changs before they closed at 11pm. YUM
Chocolate!
