For reasons I have yet to understand, in culinary school... you are supposed to
mash the holy crap out of potatoes, until you can't tell what they are, and then
put them in a pastry bag and pipe them out in shapes. WTF? This is Texas. I want
chunks of potatoes, I want some skins, I wanna know they are real potatoes and
not that junk from a box.
